Beans - Chapter 3
Bean Casserole
1 lb. hamburger
1/2 to 3/4 lb. uncooked packaged bacon ends and pieces, cut into 1 inch pieces
1/2 cup onion, chopped
1 cup tomato catsup
2 teaspoons mustard
1/2 cup brown sugar
1 tablespoon vinegar
1 can butter beans & juice(baby limas), 15 to 16 oz.
1 can baked beans (only Campbell's Pork and Beans), 15 to 16 oz.
1 can red kidney beans & juice, 15-16 oz.
Optional Ingredients:
additional beans, like black, navy, or pinto.
Oven: 325 degrees for about 1 hour.
Need: skillet, large bowl, large baking pan.
Lightly brown the hamburger, bacon, and onion together.
While the hamburger is browning, mix
together the rest of the ingredients,
including the juice from the beans, in the bowl.
Add browned mixture to the bean mixture.
Pour into baking pan.
Bake. Serve.
To freeze: put leftovers in refrigerator overnight. Scoop off fat. Freeze in single servings.
When
frozen, remove from containers and put each serving in a plastic lunch bag.
Store these in large
plastic bags.
Chile
2 pounds hamburger
2 onions, minced
30 to 32 oz. red kidney beans, drained
30 to 32 oz. stewed tomatoes (use more to stretch the recipe)
1 teaspoon oregano
1 tablespoon chili powder, more to taste, or none at all
Need: large pot for top of stove.
Brown hamburger. Add onion and cook two minutes.
Add everything else.
Simmer on the top of
the stove for 20 minutes or more.
Green Beans & Almonds
1 tablespoon butter
1/4 cup almonds, slivered or chopped
15 to 16 oz. canned string beans with juice
Melt butter in a pan on the stove top.
Add the almonds.
Stir continuously until lightly
browned.
Add the string beans with the juice.
Heat and serve.
Marinated Green Beans
15 to 16 oz. canned green beans, drained
15 to 16 oz. canned wax beans, drained
15 to 16 oz. canned kidney beans, drained
2 tablespoons diced bell pepper
1/2 medium onion, chopped
Dressing:
1/2 cup oil
2/3 cup white vinegar
3/4 cup sugar
1 teaspoon salt
Need: glass bowl, blender for dressing.
Put beans, bell pepper, and onion in the bowl.
Mix the dressing ingredients in the blender.
Pour
over the beans.
Marinate about 4 hours in refrigerator or until serving time.
Drain and serve.
Green Beans & Onions
4 slices uncooked bacon, diced
1 medium onion, chopped
1 lb. fresh green beans, cut into 1 inch pieces
water
Need: medium saucepan.
Brown the bacon in the saucepan, add the onion.
Cook about 5 minutes, until onion is soft.
Add
string beans. Mix together.
Add enough water to cover beans.
Cook 15 to 60 minutes, depending
on how you like your beans.
